If I had to choose one food to eat all day everyday it would have to be an acai bowl! Since its something I make SO often I thought I would quickly share my go to acai bowl recipe here.
Ingredients for 1 bowl :
1/4 cup choice of milk (I use almond milk, you can substitute milk with OJ if you prefer a tartier taste than a creamier taste)
1 scoop of plant protein powder (*optional – I add this in to get in some extra protein!)
1/2 cup of mix berries ( * you can add in any other fruit like mango, blueberries only, strawberries only if you prefer that)
1 tbsp of PBfit
I blend all the ingredients together in my Vitamix. I love to mash and blend at the same time and not overblend as it causes the mixture to become more runny instead of thick. I love the Vitamix as its an incredible powerful blender and also has a tool to mash instead of just blending. It is pricey but it is SO worth it as its long lasting and so versatile.
After this I serve immediately in a bowl and add my favorite toppings some of which are bananas, blueberries, granola, coconut flakes, shaved almonds, chia seeds, mango, etc!
